Gluten-Free?

One of my closest friends recently had to change her eating habits and go gluten-free. This was a drastic change for her, but I must say she has worked hard in finding her place in the gluten-free world. She experiments with different products to replicate the things she once loved. For my gluten and dairy free people. I am often experimenting in the kitchen because I am determined to make gluten free baked goods at home. So....I was making a banana bread for the Michael's (not gluten and dairy free) when I decided to try out Apple Bread.

I am gluten and dairy free and Felicity can't eat eggs so most of my baked good are vegan by default. Many of them turn out terrible because it lacks the moisture of butter and its flaky because it needs eggs to hold it together....BUT this gluten free and vegan apple bread was phenomenal 😋


Apple Bread Recipe:

3/4 cup unsweetened applesauce

2 large eggs (or egg replacer)

2 cups gluten free All purpose flour

1 tsp Baking soda

1/2 tsp Cinnamon

3/4 cup Granulated sugar

1/2 tsp Salt

1 tsp Vanilla extract

1/2 cup olive oil (instead of butter)


Mix all dry ingredients.

Add the wet ingredients and mix. It will be a sandy texture.

I used a non stick pan lined with parchment paper.

Baked at 325⁰ for 1 hour.


It was half gone by the time I took the photo.

Also, this walmart gluten free flour is phenomenal. I have tried a lot of gluten free flours and this is the only one that acts like "real" flour.
